Course Description: This unit deals with the skills and knowledge required to create a variety of entrees from meats, poultry and seafood with a range of complimentary stocks, sauces and soup preparation for a commercial kitchen or catering operation. 

 

*CULINARY ARTS II - Prepare Cold Meals 

(Leading to Commercial Cooking NCII)

Duration: 40 hours 

Training Cost:  8,000.00 

Course Description: This unit deals with the skills and knowledge required to prepare a range of sandwiches, hot and cold appetizers, salads, vegetable, fruits, eggs and starch dishes including preparation of various dressings in a commercial kitchen or catering operation. 

 

*CULINARY ARTS III - Prepare and Bake Pastry Products

(Leading to Commercial Cooking NCII) 

Duration: 40 hours 

Training Cost:  8,000.00 

Course Description: This unit deals with the skills and knowledge required to produce a range of pastries, cakes and bread in a commercial kitchen or catering operation. 

 

*On-the-Job Training

Duration: 316 hours 

 

FOOD AND BEVERAGE SERVICE NCII

Duration: 40hours + 296hours OJT 

Training Cost:  5,000.00 

Course Description: This course is designed to enhance the knowledge, attitude and social skills in the Food & Beverage Service Operation. It also outlines the specific tasks of personnel involved in providing service to guests. 

 

BARTENDING NCII

Duration: 40hours + 246hours OJT 

Training Cost:  8,000.00 

Course Description: This course is designed to develop the knowledge and skills of the student to the fundamentals of bartending.
